So why is this answer correct? : Éclairs were likely invented by renowned French chef Antonin Carême in the 1860s. These cream-filled pastries were mysteriously named after the French word for “lightning” — there is no record as to why. Popular theories include the light reflection from the shiny fondant icing, or that they’re so good, they’re gone as fast as lightning. The first record of the éclair appeared in an 1860 “Vanity Fair” article, and later, in the “Boston Cooking School Cook Book” in 1884.
