Today, coleslaw is a must-have side dish for American barbecues and picnics, but like most American foods, it was introduced by immigrants. Dutch settlers in New York brought with them a recipe for a shredded cabbage salad. It is also from the Dutch that we get the name for coleslaw, which they call “koosla,” meaning “cabbage salad.” There are many documented American coleslaw recipes from the 18th century, especially after the invention of mayonnaise which further popularized the dish.
